Overview
Acclaimed Australian Chef Shannon Bennet's Vue de monde is arguably Australia's best restaurant, winner of many accolades including consistently repeated Three Hats in The Age Good Food Guide and Three Stars in Australian Gourmet Traveller.
Moving to a new prestigious location at the top of Melbourne's Rialto building, the operators were keen to have a steady supply of ice to supplement their signature hand carved ice.

Solution
Hoshizaki assessed the needs of the restaurant and bar and supplied:
- the freestanding FM120EE flaker ice machine with integral storage to supply 125kgs of flaked ice per day;
- a large FM481AGE flaker ice machine on a B801 storage bin to supply 500kgs of flaked ice per day; and
- an IM240M2E28 ice machine to supply 240kgs of 28mm cubed ice per day.
Result
That all adds up to a lot of flaked ice for cocktails and food preparation and presentation. To supplement the hand carved ice in the bar the lovely big clear premium European sized ice cubes complement the outstanding beverages on offer and maintain fresh undiluted drink quality.
