Ivy

Overview

Ivy is the brainchild of the Merivale Groups Justin Hemmes. It has become the talk of the town in Sydney and comprises 18 bars and restaurants, an open air pool bar, function areas including a ballroom, private suites and a drinks list second to none.

Justin needed equipment that not only produced premium beverages, but was incredibly reliable. The venue was built from the ground up for over $150m and Justin was not going to invest in equipment that would incur further costs down the track or risk product delivery.

Solution

Using Lancer Draught Beer equipment, Thomson Refrigeration installed a beer system that has become a benchmark of quality installs in NSW and possibly the country. Three cellars feeding over 100 taps run almost continuously and dispense one of the best quality draught beers around.

Using Hoshizaki Ice machines sourced from Channon Refrigeration, the venue has managed to create a point of difference with its beverages and in some cases solely due to the ice in them.

The venue has four Hoshizaki ice makers, including flakers, 32mm cubers and a 48mm ice baller – yes, one that produces 48mm ice balls!!

The balls have been used primarily in expensive scotches and whiskeys, but is used in some selected cocktails too. The entire soft drink system, installed by Coca-Cola is sourced from Lancer.

The new Merivale restaurant, Felix, features a Hoshizaki Gastronorm reach-in refrigerator HRE-70B and a FM251 Ice Flaker machine.

Results

Hoshizaki Lancer has now become, through it’s distributors, the choice of the Merivale group for beer systems and ice makers and the group has already added additional ice makers to its other venues such as Establishment.
